Devil's food cupcakes with sour cream chocolate frosting

                                     
I found this REALLY simple recipe for red devil's food cupcakes with sour cream chocolate frosting on pinterest (day 14). All of the other recipes look great as well. I didn't want the cupcakes to be red, so I omitted the red food colouring.



Mind the frosting, I'm still learning!
Ingredients:
Cupcakes:
  • 1 and 1/2 cups (190 grams) all-purpose flour
  • 1 and 1/4 cups (300 grams) white sugar
  • 1/2 cup (60 grams) cocoa powder
  • 1 teaspoon (8 grams) baking soda
  • 1 teaspoon (8 grams) salt
  • 2/3 cup (150 grams) melted butter
  • 1 cup (245 grams) yogurt
  • 1/2 teaspoon (2.5 ml) vanilla extract
  • 2 eggs
Frosting:
  • 8 ounces (225 grams) semisweet chocolate
  • 1 teaspoon (3 grams) espresso powder
  • 1 cup (230 grams) sour cream
  • 1/4 cup (85 grams) honey
  • 1/4 teaspoon (1.25 ml) vanilla extract
Directions:
  1. Preheat oven to 175°C or 350°F.
  2. Mix together flour, sugar, cocoa powder, baking soda and salt.
  3. Add butter, yogurt and vanilla extract. Blend for 2 minutes. Add the eggs, blend for 2 more minutes.
  4. Bake in oven for 20 minutes or until toothpick comes out clean.
  5. Melt the chocolate and espresso powder. Let cool.
  6. In another bowl, blend together the sour cream, honey and vanilla extract. Fold in the chocolate mixture and stir until well blended.
  7. Frost the cupcakes.
