Apple Pie and Mini Apple Pies / Jabolčna pita




During the summer, apples are in season. So the best way to use them is to make apple pie!!! I saw these cute mini apple pies and decided I wil make a few myself. This is the BEST apple pie recipe and I could eat the filling as it is. I found the recipe in a slovene cookbook written by Marija Ilc and sister Vendelina.




I think that the recipe is pretty easy, just be careful when peelling all of the apples because they turn brown pretty fast.

Ingredients: 
Crust:
  • 2/3 cup butter, softened (150 grams)
  • 2 and 3/4 cups all-purpose flour (350 grams)
  • 1 and 1/2 teaspoons baking powder (6 grams)
  • 3/4 cup powdered sugar (120 grams)
  • lemon zest of one lemon
  • 1/8 teaspoon vanilla extract (5/8 ml)
  • 2 egg yolks
  • 4 tablespoons milk or sour cream(60 ml)
Filling:
  • 2.2 pounds apples (1 kg)
  • 1/3 cup sugar (80 grams)
  • 1 tablespoon breadcrumbs (7 grams)
  • 1/4 cup butter
  • 1 tablespoon rum (15 ml)

Directions:
In a medium sized bowl, beat the softened butter. Then mix in the flour, baking powder, sugar, zest and vanilla extract. Add the egg yolks and milk and knead the dough. Wrap the dough and chill in the refrigerator for 30 minutes.
While the dough is chilling, peel and cork all of the apples for the filling. Use a food processor to slice them into thin slices. Mix the slices with the sugar, breadcrumbs and rum.
Preheat the oven to 350 degrees fahreinheit or 180 degrees Celsius.
Roll out half of the dough and put it in the greased pie pan. Put in the the filling. Roll out the other half of the dough and decorate the top however you want.
Bake in the oven for 60 minutes.

Cook's note
To make the mini pies, roll out the dough and put it in a muffin baking pan. Decorate the top as you like. Bake for about 20 minutes.
If youwish to  make only mini pies, double the dough.
