Chocolate Silk Pie


I am so sorry I haven't posted in a while. I have been really busy with school and couldn't post anything, but I did have time to whip up, literally, a chocolate silk pie, which is egg free and contains only six ingredients, including the ingredients for the crust.



I must warn you that I took the pictures on a red tablecloth on the dinner table during our Thanksgiving dinner, so the photo quality and the arrangement aren't as good.

I used a mixture of two recipes, the chocolate filling recipe from allrecipes and the crust recipe from about.com and altered them a bit.

Ingredients:
  • 1 and 2/3 cup (145 grams) graham cracker crumbs
  • 1/4 cup (50 grams) sugar
  • 2 tablespoons (14 grams) cocoa powder
  • 1/2 cup (115 grams) butter, melted
  • 12 ounces (340 grams) high quality chocolate , chopped (I used semisweet)
  • 1 cup (235 ml) hot milk 

Directions:
  1. Mix together the graham cracker crumbs, sugar, cocoa powder and melted butter until well combined. Press the mixture onto the bottom and sides of a 9-inch pie plate. Refrigerate while making the filling.
  2. Put the chocolate into a food processor, turn it on and gradually pour in the hot milk. Blend for about a minute or until smooth. Refrigerate for 1 hour and 30 minutes until it is slightly thickened but not set.
  3. Gently stir the filling and pour into the prepared crust.
  4. Refrigerate at least an hour before serving.


*Cook's note:
If you are in a hurry, you can put the filling in the freezer for 30 minutes.
