Chewy chocolate coconut bars

I have been REALLY busy these past few weeks, with school, Easter and everything in between. I did have time to make these chewy coconut bars. They are really easy to make, just blend and bake. I found the original recipe here.



So the recipe goes like this:

Ingredients:
  • 2/3 cup (135 grams) shortening or butter
  • 1 cup (220 grams) brown sugar
  • 1 cup (200 grams) white sugar
  • 1/2 teaspoon (2.5 ml) vanilla extract
  • 3 eggs
  • 2 cups (250 grams) all-purpose flour
  • 1 teaspoon (4 grams) baking powder
  • 1/2 teaspoon (4 grams) salt
  • 1 and 1/2 cups (240 grams) chocolate chips
  • 1 cup (70 grams) shredded coconut
Directions:
  1. Preheat oven to 350°F or 175°C. Grease a 13 X 9 inch bake pan.
  2. In a large bowl, beat together the shortening or butter, sugars, vanilla extract and eggs. Slowly blend in the flour, baking powder and salt. Fold in the chocolate chips and shredded coconut.
  3. Bake in the oven for 20 to 25 minutes.
  4. Let cool before cutting into bars.
