I have been REALLY busy these past few weeks, with school, Easter and everything in between. I did have time to make these chewy coconut bars. They are really easy to make, just blend and bake. I found the original recipe here.

- 2/3 cup (135 grams) shortening or butter
- 1 cup (220 grams) brown sugar
- 1 cup (200 grams) white sugar
- 1/2 teaspoon (2.5 ml) vanilla extract
- 3 eggs
- 2 cups (250 grams) all-purpose flour
- 1 teaspoon (4 grams) baking powder
- 1/2 teaspoon (4 grams) salt
- 1 and 1/2 cups (240 grams) chocolate chips
- 1 cup (70 grams) shredded coconut
- Preheat oven to 350°F or 175°C. Grease a 13 X 9 inch bake pan.
- In a large bowl, beat together the shortening or butter, sugars, vanilla extract and eggs. Slowly blend in the flour, baking powder and salt. Fold in the chocolate chips and shredded coconut.
- Bake in the oven for 20 to 25 minutes.
- Let cool before cutting into bars.
