What is better than having delicious muffins for breakfast on a busy morning? I don't know. That is why I wanted to share with you this recipe for espresso chocolate muffins. They are very easy to make. I got the recipe here.
Here are the instructions:
Ingredients:

- 1/2 cup cocoa powder
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup granulated sugar
- 2 eggs
- 1/3 cup vegetable oil
- 1 cup 2 tablespoons milk
- 1/2 teaspoon vanilla extract
- 1 tablespoon espresso powder
- 1 and 1/2 chocolate chips, divided
Directions:
- Preheat oven to 350°F or 175° C.
- Mix together the flour, cocoa powder, baking powder, baking soda and salt in a medium sized bowl, set aside.
- In a large bowl, whisk together the sugar, eggs, vegetable oil, milk, vanilla extract and espresso powder until combined.
- Gradually whisk in the dry ingredients. Stir in 1 cup of chocolate chips.
- Evenly divide the batter into muffin tins and bake in the oven for 15 minutes, then reduced the temperature to 325°F or 162°C. I got these great muffins with a great top.
