Espresso chocolate muffins




What is better than having delicious muffins for breakfast on a busy morning? I don't know. That is why I wanted to share with you this recipe for espresso chocolate muffins. They are very easy to make. I got the recipe here.

Here are the instructions:


Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1 cup 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon espresso powder
  • 1 and 1/2 chocolate chips, divided


Directions:
  1. Preheat oven to 350°F or 175° C.
  2. Mix together the flour, cocoa powder, baking powder, baking soda and salt in a medium sized bowl, set aside.
  3. In a large bowl, whisk together the sugar, eggs, vegetable oil, milk, vanilla extract and espresso powder until combined.
  4. Gradually whisk in the dry ingredients. Stir in 1 cup of chocolate chips.
  5. Evenly divide the batter into muffin tins and bake in the oven for 15 minutes, then reduced the temperature to 325°F or 162°C. I got these great muffins with a great top.

6.  Let muffins cool in the pan for 15 minutes, then remove from pan and place on cooling rack and let cool.
