Delicious and chewy soft Christmas cookies you will want to munch on
This is my adaptation to the "Soft Christmas cookies" recipe by Georgie Bowers on Allrecipes. The cookies are easily stored in a closed container at room temperature and last a few weeks.
I like to make baking really simple, so I often don't do special prep like soften the butter, but just melt it instead. Life is too short to worry about the temperature of the butter. Cheers and Merry Christmas!

- 1 cup (225 g) butter, melted
- 1 and 1/2 cups (300 g) white sugar
- 2 eggs
- 1 teaspoon (5 ml) vanilla extract
- 3 and 3/4 cups (470 g) all-purpose flour
- 1 teaspoon (5 g) baking powder
- 1/2 teaspoon (3 g) salt
- In a large bowl, beat together the melted butter and sugar until well incorporated. Beat in the eggs one at a time, then stir in the vanilla.
- Mix together the flour, baking powder and salt in a medium bowl and set aside.
- Gradually blend the flour mixture into the butter mixture until absorbed. Make dough into a ball and wrap it in plastic wrap and refrigerate for 2 hours.
- Preheat oven to 200ºC (390º F). Prepare the baking sheets with parchment paper. On a clean, floured surface roll out small portions of the dough about 0.5 cm thick. Cut out shapes using cookie cutters.
- Bake in the oven for about 10 minutes until the edges are barely brown. Remove from cookie sheet and cool completely.
