I was searching the Chocolate-covered Katie blog and found a recipe for homemade oreos. I tried making them and they turned out okay.
Ingredients:
- 1/4 cup plus 2 tablespoon (45 grams) cocoa powder
- 1/4 cup plus 2 tablespoon (75 grams) white sugar
- pinch of salt
- 1/4 teaspoon (2 grams) baking soda
- 1/2 teaspoon (2.5 ml) vanilla extract
- 1/4 cup (60 ml) vegetable oil
- 3 tablespoon (45 ml) milk
- 2 tablespoon (30 ml) maple syrup
Filling:
- 1/2 cup (62 grams) powdered sugar
- 1/4 teaspoon (1 ml)vanilla extract
- 1/4 cup (50 grams) shortening (you cannot substitute it with butter, since then the filling will have butter flavour)

- 3/4 cup (95 grams) flour- 1/4 cup plus 2 tablespoon (45 grams) cocoa powder
- 1/4 cup plus 2 tablespoon (75 grams) white sugar
- pinch of salt
- 1/4 teaspoon (2 grams) baking soda
- 1/2 teaspoon (2.5 ml) vanilla extract
- 1/4 cup (60 ml) vegetable oil
- 3 tablespoon (45 ml) milk

Directions:
- In a medium sized bowl, combine the flour, cocoa powder, sugar, salt and baking soda.
- In another bowl, combine the vanilla extract, oil, milk and maple syrup. Add in the dry ingredients until it forms into a dough.
- Refrigerate for half an hour.
- Preheat the oven to 300 degrees F or 150 degrees C. Roll out the dough and cut out circle shapes with a circle cookie-cutter. They don't have to be too big since the cookies will spread. Put them on a cookie sheet and bake in the oven for 10 minutes. Allow cookies to cool for at least 10 minutes.
- To make the filling, mix all of the ingredients in a small bowl with a fork.
- Put a teaspoon of the filling onto half of the cookies and cover them with the other half of the cookies.
- Refrigerate the cookies so the filling firms up.
- Store in an airtight container in the fridge so the filling stays hard.
